Start by juicing one fruit with a citrus juicer. With a fine mesh strainer strain the pulp (this is optional but I like to). Taste for sweetness and add maple syrup if necessary. Pour the juice into one popsicle mold. (One medium sized fruit usually has enough juice to fill one popsicle mold). Repeat with the rest of the fruit. Feel free to mix the fruit juices together, adding some of the sweeter to juices to the more bitter ones. If making a lemon or lime popsicles dilute the juice with water (1:1) and add sweetener to taste.
Once all of your popsicle molds are filled, place into the freezer without the sticks for 1 hour. Then remove from the freezer and add the popsicle sticks. You want the mixture to be semi frozen when you put the sticks in so that they stay in place. Return back to the freezer for another 2-3 hours until completely frozen. To remove the popsicles from the molds, let sit at room temperature for 5 minutes or hold over warm running water. Enjoy!
