3cups chopped pineappleabout 2/3 of a whole pineapple
1cupfreshly squeezed orange juice, strained2-3 medium sized oranges
1/2of a banana
1-2inch cubeginger, peeled
8large edible flowersoptional
Instructions
Prep the popsicle molds by placing one edible flower face down into each mold. Insert the popsicle sticks. Set aside.
Add the chopped pineapple, orange juice, banana and ginger to a blender. Blend until smooth. Taste and add more ginger if desired.
Pour the mixture into the popsicle molds. Place in the freezer for 3-4 hours or overnight.
When ready to eat remove from the molds and enjoy!
Notes
*Store bought orange juice can be substituted for fresh orange juice.*The yield of this recipe depends on the size of the molds. The mold I used makes 8 popsicles that are L 3.5" x W 2" x H 1".*This recipe can also be made into smoothies or smoothie bowls. Replace the fresh pineapple and banana with frozen. For a thick smoothie bowl use only 1/2 cup orange juice. This will work best in a high speed blender or food processor.*Make sure that your edible flowers come from a source that grows flowers specifically for consumption. Never pick flowers from fields or gardens because you don't know what chemicals or animals may have contaminated them. I recommend using dried pansy or violas as they don't have a strong taste and are very thin, making them easy to eat.
