These matcha rice krispie treats give a nostalgic childhood favorite a festive makeover, shaped into adorable Christmas trees. Soft, chewy, and naturally green from matcha, they’re a fun holiday treat!

The Ingredients
- Vegan marshmallows. I use Dandies brand. Vegan marshmallows don’t melt as well as regular ones. The mixture will be very sticky and thick, it will take a bit of elbow grease to mix.
- Vegan butter. It helps to thin out the marshmallows and gives a richness.
- Almond milk. Any milk of choice can be used.
- Vanilla extract. Compliments matcha nicely.
- Crispy rice cereal. Use any brand that you prefer. The mixture can easily be adjusted with more or less cereal. If you like your treats soft and gooey use less and if you like them firm and crisp add more.
- Matcha powder. It’s my go-to for green holiday desserts! Use good quality matcha powder. It should be a vibrant green, not too bitter and made in Japan. Culinary grade matcha is fine to use for this recipe. My advice is to use one that you love to drink.
- Decorations. I used vegan white chocolate and pink peppercorns to decorate. For kids, sprinkles are probably better! I used chocolate covered wafer cookies for the stumps. Use any type of chocolate or cookie.

- Melt the butter.

Festive Vegan Matcha Rice Krispie Treats
Ingredients
- 2 bags Dandies vegan marshmallows
- 3/4 cup vegan butter
- 1 tablespoon almond milk, or milk of choice
- 1 teaspoon vanilla extract
- 2 tablespoons good quality matcha powder, sifted
- 7-8 cups crispy rice cereal, see notes
- 8 chocolate covered wafers cut in half for the stumps, see notes
- 1/3 cup vegan white chocolate to decorate, optional
- pink peppercorns or sprinkles to decorate, optional
Instructions
- Line a 9"x 13" baking dish with parchment paper and set aside.
- In a pot melt the butter on medium heat. Add the almond milk and vanilla extract and stir.
- Add the marshmallows. Stir occasionally until completely melted. Vegan marshmallows don't melt as well as conventional ones. They are more sticky and thick.
- Once melted sift in the matcha powder and stir until incorporated. It will take a bit of elbow grease to mix it.
- Add the crispy rice cereal to a very large bowl. Add in the marshmallow mixture and stir.
- Transfer the mixture to the lined baking tray and use a spatula to spread it out evenly. Let it cool for about 30 minutes.
- Once cooled remove it from the baking tray. Cut in half lengthwise. Take one half and cut it into 7 triangles. You will have 2 leftover half triangles from each end. They can be stuck together and trimmed to make another triangle. You should have 8 triangles in total. Repeat with the other half.
- Melt the white chocolate and use a piping bag to decorate. Top with pink peppercorns or sprinkles. If using chocolate wafer cookies for the base, cut them in half. Use a bit of the melted white chocolate to stick them onto the trees.
- They can be stored in a sealed container at room temperature or in the fridge for up to 5. Enjoy!
