This sesame miso brittle is a crunchy treat filled with nutty toasted sesame seeds and a touch of miso for a savory umami kick. Easy to make, it’s perfect for gift bags, entertaining or whenever you want something a little different!

The Ingredients
- Sesame seeds. Use white untoasted sesame seeds as they will toast as they cook.
- Miso. Light or dark miso can be used. Light miso will have a lighter flavor and dark miso a stronger flavor. It can be found in most Asian grocery store’s and some health food stores. It gives the brittle a slightly salty and umami flavor.
- Sugar. I use white sugar. A darker coloured sugar will result it a darker coloured brittle. The results may vary with other types of sugar.
- Corn syrup. Use light corn syrup. Honey can be substituted if you’re not vegan.
- Butter. Vegan butter or regular butter can be used.
- Baking soda. This is added at the end to create air bubbles. The bubbles make the brittle lighter and easier to break/eat.
How To Make The Brittle
Making brittle at home is quite simple! You just need a few basic tools, including a heavy-bottomed pot (avoid using a non-stick pot, as it’s not designed for high heat). The process itself is quick and straightforward. While a candy thermometer isn’t absolutely necessary, it’s helpful to ensure the brittle reaches the right temperature for that satisfying, crunchy texture instead of turning out too soft. Listed below are the basic steps with a more detailed version in the recipe card:
- Melt the sugar, corn syrup and water together.
- Add the sesame seeds and stir.
- Continue to cook and stir until it turns a golden brown and the sesame seeds are nice and fragrant (300F).
- Take the pot off the heat and stir in the butter and miso.
- Add the baking soda.
- Spread it out onto a lined baking tray and let harden.
- Break into pieces and enjoy!

This homemade sesame miso brittle is a fun spin on classic brittle. It has the perfect balance of sweet and savory umami flavors. The nutty sesame crunch is seriously addictive, and the best part? It comes together quickly and looks way fancier than the effort it takes!

Sesame Miso Brittle
Ingredients
- 3/4 cup sugar
- 1/4 cup light corn syrup, *see notes
- 1 tablespoon water
- 1 cup untoasted sesame seeds
- 2 tablespoons miso, *see notes
- 1 tablespoon butter, vegan or regular
- 1/4 teaspoon baking soda
Instructions
- Line a baking tray with parchment paper and set aside.
- In a heavy bottom pot add the sugar, corn syrup and water. Heat on medium and stir until the sugar is dissolved and starts to bubble. Use a wood or metal spoon to stir the mixture. A plastic or silicon spoon may melt when stirring as the temperature increases.
- Add the sesame seeds and stir. Continue stirring until it turns a golden color, about 7-10 minutes. It should smell like toasted sesame seeds. If using a candy thermometer it should read 300℉.
- Remove the pot from the heat and add the butter and miso. It will bubble up slightly. Continue to stir until it's incorporated.
- Add the baking soda and stir. This will cause it to foam up a bit.
- Pour the mixture onto the lined baking sheet and smooth out. Make sure not to touch it because it's very hot!
- Let it cool for about 30 minutes. It may take longer depending on the humidity.
- Once it's hardened break it into pieces. They are best stored in a sealed container in a cool, dry place. They can stick together if piled on top of each other so use parchment paper to layer them. If it's humid they may get sticky and soft. The fridge may create moisture causing them to get slightly sticky as well. They're best eaten within 1 week. Enjoy!
