Made with simple, healthy ingredients these vegan key lime pie popsicles taste just like the real thing but in a fun portable form. What gives them a smooth and creamy texture is the sneaky ingredient of avocados! Along with zesty limes, creamy coconut and crunchy ginger snaps these are sure to become one of your favorite summer treats!
The Ingredients
There are only 6 simple ingredients needed for this recipe:
- Ripe avocados. If you’re someone who doesn’t like the flavor of avocados, don’t worry because none of the flavor comes through!
- Limes. Organic limes are preferred since both the juice and the zest will be used.
- Almond milk. Any milk alternative can be used.
- Coconut cream. I recommend using only coconut cream (not coconut milk). It helps to make the texture more creamy and freezes with less ice formation. See the ‘Note’ section in the recipe on how to separate coconut cream from coconut milk.
- Maple syrup. Any liquid sweetener can be substituted but make sure to add it gradually since some sweeteners are more sweet then others.
- Ginger snaps. Graham crackers can be substituted, but I prefer using ginger snaps since ginger compliments the flavors in the popsicles so well.
Do I Have To Use Key Limes?
Definitely not! Key limes are smaller, more tart and noticeably more fragrant (a slight floral scent) than regular limes. If you can get your hands on key limes you should use them but regular limes can be easily substituted. Usually 2 key limes are needed in place of 1 regular lime. For this recipe I’m using regular limes.
How To Make Key Lime Pie Popsicles
This recipe is very simple and only takes about 15 minutes until the popsicles are ready to be put into the freezer.
- Start by blending the avocado mixture until its smooth and creamy.
- Place the coconut cream into a bowl and stir until it’s smooth.
- Break up the ginger snaps into crumbs.
Once you have all three mixtures ready, start layering your popsicles. I like to make at least 2 layers of each mixture in every popsicle so that you can get all of the flavors in each bite!

Vegan Key Lime Pie Popsicles
Ingredients
- 2 small avocados
- zest of 2 organic limes*
- 1/3 cup freshly squeezed lime juice (2 limes)
- 1/2 cup unsweetened almond milk (or milk alternative of choice)
- 3-4 tablespoons maple syrup*
- pinch sea salt
- 3/4 cup coconut cream*
- 4-6 ginger snap cookies
Instructions
- In a blender add the avocado, lime zest, lime juice, almond milk, maple syrup and sea salt. Blend until smooth. Taste for sweetness and add more maple syrup if desired.
- In a small bowl pour the coconut cream and stir until smooth.
- Crush the ginger snaps into crumbs by placing them into a ziplock bag and crushing them or alternatively they can be pulsed in a food processor.
- To layer the popsicles start by pouring some of the avocado mixture, then spoon in a few dollops of the coconut cream and sprinkle some of the crushed cookies. Repeat until the popsicle mold is filled. I like to have at least 2 layers of each mixture for each popsicle. Tap the popsicle mold on the counter to get rid of any air pockets. Place in the popsicle sticks and put into the freezer for 4 hours or until frozen. When removing from the freezer, let them sit at room temperature for 5-10 minutes and they will easily come out of the molds. Enjoy!
